Wursthaus Pty Ltd was established in 1985 with the intention of providing a wide range of traditional and innovative smallgoods and premium quality fresh meats, poultry and game. From humble beginnings in a small corner butcher shop in Lenah Valley (a suburb of Hobart) the Company is now housed in a purpose built manufacturing facility at Cambridge (near the Hobart Airport).

In 1992 the Company established the Wursthaus Kitchen in the centre of the Salamanca precinct close to the Hobart CBD. The Kitchen became a leader in the take home gourmet food scene in Hobart. It has now been franchised and run independently as does Wursthaus at Olivers in Launceston. Both these retail outlets showcase the entire Wursthaus product range as well as developing their own unique product range of local and imported items. It is Wursthaus policy to take an uncompromising attitude to the production of all our food products and in doing so we take no shortcuts and use only the best quality raw materials, sourced where possible, locally, including Nichols poultry. Traditional charcuterie practices are lost in the mass production of smallgoods which relies on chemical additives and fillers to extend the product (i.e. hold added water in) as well as preservatives, colorants and flavour enhancers to guarantee shelf life and to replace natural flavours lost through processing. As a smaller integrated business we choose to be hands-on producers and our philosophy is to make smaller batches frequently and to avoid an automated production line. HOOD WINES Tas (01/07/2006) |
Coal River Valley (20 minutes to the North of Hobart) is home to around forty vineyards and cellars, one of which is Hood Wines.
My husband, Alain Rousseau, is the Winemaker there. Here is his opinion of the 2006 vintage (left : Alain /right : Graeme Allen, Winery Manager).

The grape harvest took place early this year (due to good spring rains followed by a hot, dry summer).
The vines were in perfect health, no sign of any disease nor any water stress, thanks to the able supervision of the vineyard managers.
Generally speaking, the harvest is approximately 10% less than average, especially for the Pinots (6 tons/ha = 40 hecto/ha). The grapes for the sparkling varieties (basic wines) were harvested end of February to early March in perfect condition. They range from 10.5 to 11.5 degrees Baumé and have good acidic content, comprising approximately 50% Chardonnay and 50% Pinot noir (sparkling blend).
This year, all the varieties were ripe at the same time, both in the North and South of Tasmania, which is unusual. We therefore had to deal with a large amount of grapes over a short period of time.
Aromatic wine varieties (Sauvignon blanc, Pinot gris) and Chardonnays were all cellared at the end of March as were the Pinots Noirs and the Rieslings which would usually be picked 3 to 4 weeks after the Chardonnays.
The whites are very refined with good aromatic notes and breadth. The Pinots noirs will be exceptionally good due to a smaller harvest, superb concentration of fruit, intense colour and well balanced tannins. In short, these wines should keep well and perpetuate the solid reputation of Tasmanian Pinot Noir.
At the moment, 80% of the malolactic fermentation has been completed for the reds; they have already been barrelled. We have also started bottling the aromatic varieties. Chardonnays in barrels will be under batonnage (lies stirring) for another 3 to 4 weeks.
